Fig, Feta & Mint Crostini

I don’t know anyone who doesn’t like figs – they’re so sweet and unassuming – but I avoided them for years due to my childhood dislike of Fig Newtons. I was just never a fan of that packaged fig flavor. Later, I came to realize (of course!) that fresh figs are amazing. They’re in season now, and their season is short, so you should go find some.

When I have fresh figs, they only seem to last a day (maybe two) so I usually make something really simple with them. Figs, feta, and mint are a delicious combination, so I love them in these little sweet & savory crostini bites!

This healthy crostini is a great snack or holiday appetizer! We love this fresh, sweet, and salty combination.
Author: Jeanine Donofrio
Recipe type: Appetizer
Serves: 6-8
Ingredients
  • 1 small baguette, sliced into about 16 pieces, toasted
  • 8 fresh figs
  • 1 cup ricotta cheese or vegan sun "cheese"
  • 30 small mint leaves
  • ½ cup crumbled feta cheese
  • Zest of 1 lemon (optional)
  • Sea salt, to taste
Instructions
  1. Assemble each crostini with a spread of ricotta and a bit of lemon zest, if using. Sprinkle with feta and place mint and figs on top. Top with more feta and a pinch of salt.
Notes
Vegan version: use sun cheese instead of ricotta, and skip the feta.

It’s really cool how this appetizer looks fancy yet it’s so easy to make – aside of course from the fact that figs are amazing.
Thumbs up for a really simple but perfect flavour combination!

These are perfect. If I would still have some figs on hand this would be the way I would use them, I guess I have to wait for next years season.

I love how elemental this dish is. In my dream life I’d have a fig tree right outside my door so I could always eat my fill. Instead I have to buy the expensive imports (and eat fig newtons, because I love them).

depends on where you live – I see them at the farmers market occasionally but their season is short so I grab them when I see them.

I love this simple combination. You’re absolutely right, figs keep at their ripest for only the blink of an eye, so I usually slice them on breakfast porridge or ricotta toast… But this is another great way to have it. Thanks for the inspiration!
