This blackberry cobbler recipe is easy and delicious.Ā Juicy, tangy blackberries meld into a golden batter thatās soft and moist in the middle and crisp around the edges. Topped with a scoop of vanilla ice cream, itās a mouthwatering summer dessert.
Iāve shared several biscuit-style cobblers in the pastāthereās a yummy Summer Fruit Cobbler in Simple Feel Good Food, and I also have this great blueberry cobbler on the blog.
But this blackberry cobbler recipe is my first attempt at a cake-y, batter-style cobbler. Friends, Iāve been missing out.Ā
Since this style of dessert was new to me, I loosely based this recipe on The Pioneer Womanās, using all-purpose flour, baking powder, and salt instead of self-rising flour; adding vanilla for warm depth of flavor; and cutting back on the butter and sugar to reach my preferred level of richness.
By now, Iāve made this cobbler multiple times. I still canāt believeā¦
- how amazingly easy it is (1 bowl! 10 minutes of prep!)
- how delicious it is.
Itās gooey, buttery, and practically oozing blackberry juice. I definitely recommend adding this one to your summer dessert rotation!
Blackberry Cobbler Ingredients
Hereās what youāll need to make this easy blackberry cobbler recipe:
- Blackberries,Ā of course! Fresh blackberries or frozen ones work well here. If youāre using frozen berries, thereās no need to thaw them before assembling the cobbler.
- All-purpose flour ā It makes up the base of the batter.
- Cane sugar ā For sweetness. Youāll mix some into the batter and sprinkle more on top of the cobbler to help it brown in the oven.
- Baking powder ā It helps the batter rise as it bakes.
- Milk ā Any kind you like! Iāve had success using whole milk and almond milk here.
- Unsalted butterĀ ā For richness and buttery flavor.
- Vanilla extract ā For warm depth of flavor.
- And sea salt ā To make all the flavors pop!

Recipe Variations
- Use frozen blackberries.Ā No need to thaw them before baking! The cobbler will look a bit messier, but it will still taste delicious.
- Try another fruit.Ā I think you could make this cobbler with practically any summer fruit. Pitted and halved cherries are on my list to try next. Peaches, nectarines, raspberries, blueberries, strawberries, and plums would be fantastic too.
- Make it vegan.Ā Iāve had great results making this recipe using almond milk and vegan stick-style butter (I like Earth Balanceās buttery sticks). No other changes necessary! Just serve with your favorite vegan ice cream, of course.
- Punch up the batter.Ā Stir a little cinnamon into the dry ingredients, or add some lemon zest along with the wet ingredients.
How to Make Blackberry Cobbler
This blackberry cobbler recipe couldnāt be easier to make!
Start by making the batter.Ā Whisk together the dry ingredients (including the sugar), then add the milk, butter, and vanilla and whisk until the batter is smooth.
To assemble the cobbler,Ā pour the batter into a greased 8Ć8-inch or similar baking dish. Sprinkle the blackberries evenly on top of the batter, then evenly sprinkle sugar on top.
Bake at 350 degrees until the cobbler is deeply golden brown around the edges, 50 to 65 minutes. Allow to cool slightly before serving warm with vanilla ice cream.
How to Store Blackberry Cobbler
We rarely have leftovers of this blackberry cobbler (itās too good to resist seconds!). But if you do, you can store them in an airtight container in the refrigerator for up to 3 days.
Quickly reheat them in the microwave, or warm them in a 350°F oven before serving.

Instructions
- Preheat the oven to 350°F and grease an 8x8-inch or similar baking dish.

So delicious!! I like the tweaks you made from the original as it wasnāt too sweet. I added almost another full cup of berries because I like a higher crust/berry ratio. I thawed frozen blackberries and drained off most of the juices before adding to the batter. But the crusty edges!!! And itās just buttery enough without swimming in butter. The recipe is delicious, but confusing. The photograph of the baked cobbler shows the cake on top of the fruit, which is counter to the directions. Mine was baked in a glass pan and was done after 45 minutes, not the 50-65 as suggested.
