Mother’s Day Recipes + a Giveaway!

A group of my favorite recipes that will be perfect for Mother's Day - brunch recipes, group recipes, seasonal recipes and dessert!

spring / brunch

Mother’s Day is this weekend! That sure came up quick! In case you need some recipe inspiration, here are a few of my favorites that I think would be perfect for the occasion. Plus, see below for an extra special giveaway 🙂 For brunch: I love these lightly sweet Coconut Mango Muffins. I often keep them in my freezer for a weekday breakfast or snack. To make them brunch-able, serve with the mini frittatas below: These little Mini Tomato Frittatas with Dill are as cute as they are delicious. I absolutely love the combo of dill and eggs. These little guys are…

Healthy Easter Brunch Recipes

spring / brunch / favorites

This blog is nothing if not seasonal, so let’s celebrate the holiday where rabbits lay the most delicious eggs – Easter! In all seriousness, this holiday means two things to me – brunch with family & friends and the start of berry season (yay!). So I’ve picked out a few recipes you could serve at an Easter brunch, and a few that are less Easter-y and just scream spring me to me (I’m looking at you, Sunshine Chia Bowls). You can click directly on the photos to go to each recipe: Avocado Almondaise Tartines (pictured above) Shakshuka with Spinach and Harissa Tart Cherry…

Christmas Morning Recipes

Favorite healthy holiday breakfast and brunch recipes - including Vegan French Toast, Blueberry Baked Oatmeal and more!

breakfast / brunch / holiday

And the countdown begins! As a kid, Christmas morning was always the absolute BEST part of the year. For the special morning my family celebrated with one of 2 breakfast rituals – a can of Pillsbury Cinnamon Rolls or a box of Entenmann’s chocolate doughnuts. We loved it all – although my sister and I could honestly care less about the food because the morning was all about waking up and waiting sooooo patiently for my parents to get their coffee before we could start opening presents. The recipe suggestions here are a little more homemade, but hey no judgement if you have…

Spring Brunch Recipes

healthy, fresh entertaining options for Easter Sunday or your next spring brunch!

entertaining / spring / brunch

Happy second day of spring! I don’t know where you live, but it’s been absolutely gorgeous around here lately so I’m going to brag about it a little bit. The sun is shining, colorful vegetables are showing up at the markets, and mint (a.k.a the only thing my black thumb can “grow”), is spreading like a weed in our yard. I’m not sure what our Easter brunch plans are yet, but I’m already looking forward to the weekend. If you’re starting to plan your holiday meal, here are a some of my favorite fresh & bright brunch recipe ideas to get you started! pictured…

Apple Mimosas & Butternut Baked Eggs

Host a fun & easy-going brunch with these simple baked eggs. Butternut squash, eggs, leeks, and herbs are all you need. With apple mimosas, of course.

Thanksgiving has become an odd holiday for us. During the first years that Jack and I were together, we traveled to visit family for every single holiday. It took us a while to realize that Thanksgiving weekend air travel is the worst of them all. So now we have a tradition of staying home with no real tradition. One year we stayed in and made risotto. The year after that we had a friends-giving (before they were called that). Last year, we stayed home and worked (we were just beginning the book). This year we’re going to gather with friends over a fun & easygoing…

Almond Breeze Brunch Workshop

I made "emoji smoothies," whole grain vegan waffles, and a tomato basil frittata for a brunch workshop in LA. Check out the recipes here!

travel / events / brunch

Happy Friday! I hope you have brunch plans this weekend, because today I have a little brunch recipe inspiration to get you started… Last weekend, we flew to California to host this super fun brunch cooking class with Almond Breeze. It was a blast getting to meet & cook with a few fans of the blog (of all ages!). First we made my favorite frittata recipe with summer squash, cherry tomatoes and basil. This is a great easy recipe, especially with the abundance of late summer produce that’s in season right now. Of course we couldn’t have an almond milk party without smoothies. At the class, we made super…

Chilaquiles with Avocado

Chilaquiles with Avocado - my take on fresh healthier chilaquiles. Made with corn tortillas, eggs and red chile salsa. A favorite for breakfast or brunch. Gluten free.

breakfast / vegetarian / gluten free

I’m thinking of trying to grow avocados this spring… I don’t really have a green thumb, but I eat so darn many of them, I figure it’s worth a try. (Also, I’m just now realizing that this is my 3rd avocado recipe in a row – oops!) If anyone has any experience growing them, please let me know! I’m guessing that I probably have to start soon… Today’s recipe is something I really love to make at home because it tends to be a little too greasy for me at restaurants. Chilaquiles are usually considered hangover food and it all…

Vegan Coffee Cake Muffins

vegan / baking / brunch

I’m heading to Chicago later this week and I’m trying to think warm thoughts… It’ll be all of 1 degree when I land… and, (brr), my skin just isn’t that thick anymore. These muffins are a variation of my absolute favorite childhood breakfast: my Grandma Kissel’s coffee cake. On cold snowy mornings, there was nothing better than waking up to smell of warm cinnamon-ey cake wafting through the house. Of course these are slightly healthier and also vegan – using almond milk instead of sour cream and coconut oil instead of butter. But this is cake after all, so whatever…

Vegan French Toast

No eggs? No problem. This vegan French toast recipe is easy to make with simple ingredients. Fluffy, light, and crisp, it's a delicious breakfast.

brunch

This vegan French toast recipe is just as good as the classic kind! It’s fluffy on the inside, crisp around the edges, and has a lightly sweet cinnamon flavor. You might think that it takes fussy ingredients to make French toast without eggs, but this recipe is secretly simple. Made with 9 pantry basics and ready in 20 minutes, it’s an easy, comforting, and delicious breakfast. I first tried vegan French toast years ago (like…25) at the Pick Me Up Café in Chicago. Jack and I went there regularly when we had just started dating long distance and he would…

Swiss Chard & Egg Casserole

swiss chard & egg casserole
spring / greens

Eggy casserole… fancy fritatta… I wasn’t sure what to call it but our “eggs for dinner” series continues with this new favorite. I realize this looks like a pile of greens (and it very much is), but there are thin layers of egg baked in between the light and flaky chard leaves. The trick is to toss the whisked eggs with the chard leaves raw. In the oven, the greens on the bottom wilt down, the ones on top stay a little bit crispy… a perfect mix of textures. The eggs are mixed with garlic and my favorite part –…

Sweet Potato & Brussels Skillet

This Sweet Potato & Brussels Egg Skillet is a simple, healthy vegetarian dinner or brunch! This flexible, easy recipe is also gluten-free.

sweet potato & brussels sprout skillet / loveandlemons.com

Brunchy food… it’s perhaps what I cook the most, but what makes it to this site the least. Saturday and Sunday mornings are just not the time to be breaking out the camera. So in an effort to provide a few pre-Easter brunch ideas, we had eggs for dinner… something we should really do more often. I love this sort of meal because it’s a bit of a fridge clean-out. A trip to the store is not necessarily required, you can switch this around to work with what you have. I had a sweet potato and a few brussels sprouts……
